Vegetable
Kabobs
Ingredients:
1 green, red and yellow pepper
1 pint cherry tomatoes
2 medium zucchini
1 medium eggplant
1 small red onion
2 cups (approx) FF Italian salad dressing
2-3 gloves garlic, minced
Directions:
Soak approx. 15 bamboo skewers in water.
Mix together minced garlic and salad
dressing set aside.
Cut all the vegetables in 2" chunks and
soak in pan with dressing and garlic.
Let skewers and vegetables soak for 1/2
hour.
Put
the veggies on the skewers and barbeque for
approx., 15 minutes turning
frequently to avoid burning. They will be
done when they have grill marks and
appear to be steaming. While turning brush
with marinade leftovers.
These
are extremely delicious and it was easy to
add meat to the kabobs
for the non-vegetarians in my family.
Just make sure to cook your preferred meat
on separate skewers.

Girl
Scout Cookie Cake
(Thin
Mint)
Ingredients:
Box
of Betty Crocker Chocolate Cake Mix
Container
of Better Crocker Reduced Fat Chocolate
Frosting
6
oz. milk or semisweet chocolate chips
Spearmint
oil
Egg
Equivalents (Egg Beaters)
Hershey's
Chocolate syrup
Directions:
1. Prepare the Betty Crocker Cake mix
as directed with these substitutions:
Substitute
the eggs for the fat free egg equivalents
Substitute
the oil or butter required for about 1/2 the
amount of chocolate syrup.
Pour
equal portions of the cake mix into two
9inch round pans, and bake.
2.
While the cake is baking, you can
prepare your frosting.
Combine prepared chocolate frosting with 1/2
teaspoon of spearmint oil and stir.
(You can do this in the Betty Crocker
container.)
3.
When the two cakes are done, allow them to
cool and remove them from the pans.
4.
Melt chocolate chips in microwave in two 30
second increments. Stir the chocolate in
between. Be sure not to overheat! ( The
chocolate will burn and become gross. )
Once
the chips become relatively smooth, stir in
1/2 teaspoon of spearmint oil.
While
the chocolate is still warm, cover just the
top of one cake with 90% of your mint
chocolate chip mixture. It does not matter
to me which cake or side you choose.
Immediately
place the other cake on top of the first. At
this point you should simply have your two
cakes, with a layer of mint chocolate chip
in between them.
5.
Completely frost the top and sides of your
layer cake with the mint chocolate frosting.
6.
Drizzle the remaining mint chocolate chip
mixture in a squiggly pattern over the top
of your cake!
It serves 12.
